Sweetie Pie Cupcakes

Mixed berry jam
2 ½ cups Früzo Mixed Berries
2 cups sugar
1 grated apple
1 juice and zest of lemon


  • Place all ingredients in a saucepan and bring to the boil
  • Simmer until mixture has reduced by half (about 15min)
  • Blend with a stick blender
  • Place in jar and refrigerate

Chocolate base

1 cup flour
1 cup sugar
½ cup cocoa powder
1 teaspoon bicarb
1 egg
½ cup oil
½ cup plain yogurt
½ cup boiling water


  • Preheat oven to 160°c
  • In a bowl mix together flour, sugar, cocoa, bicarb, oil , egg and yogurt
  • Mix well
  • Add boiling water
  • Mix well
  • Scoop ¼ cup of batter into each cupcake holder
  • Bake for 15-20 min or until an inserted toothpick comes out clean
  • Allow to cool completely

Mixed Berry Marshmallow Fluff


3 Egg whites
2 tablespoons sugar
¾ cups glucose syrup
2/3 cups sugar
1/3 cup water
1 cup früzo mixed berry jam


  • In a saucepan mix together glucose, sugar and water
  • Bring to the boil, boil for 5 mins
  • In the meantime in a bowl whisk egg whites until frothy, add 2 tablespoons sugar and continue to whisk until stiff peaks form
  • Once glucose mixture has finished boiling, slowly add the mixture in to the side of the bowl of egg whites whisking continuously
  • Whisk on high until it has slightly cooled and thickened
  • Add mixed berry jam
  • Whisk until well incorporated
  • Place in a piping bag


  • Pipe fluff on top of cupcakes
  • Melt dark chocolate and dip the top of the cupcake into the chocolate
  • Allow to set
  • Makes 12 cupcakes
  • Place piped cupcakes in the freezer for at least 30 min prior to dipping in chocolate
