Phyllo Quiche


  • 10 sheets phyllo pastry
  • 250 grams bacon strawberry jam (See our recipe)
  • 200 grams feta cheese
  • 200 grams gouda cheese
  • 5 eggs
  • 1 cup cream
  • Oil for brushing


  • Preheat oven to 200°c
  • In a desired baking dish, place one layer of phyllo pastry at a time, brushing with oil in between each layer
  • Repeat until all 10 sheets have been used
  • Place jam in the bottom of the pastry
  • Add feta and gouda
  • Whisk together eggs and cream and season with salt and pepper
  • Pour egg mixture into your pastry shell
  • Place in preheated oven and bake for 45 min or until egg is completely cooked and phyllo is golden
